Tuna-Not-Fish Sandwich Recipe

This is a school of tuna.

Tuna are sentient beings, tempeh is insentient soybeans.

I never liked to eat fish, even before I became vegetarian, and later vegan, so I have never had a tuna fish sandwich. When my girlfriend announced she was going to try a vegan version, I said please and no thank you. And then she came into the living room with her plate. And it looked amazing. And I tried some. And then I wanted the whole thing. And she went back to the kitchen and made me one. I’m very lucky.

And so are you, because I’m going to share her recipe for this amazingly delicious, easy, healthy sandwich, which has 16 grams of protein from the tempeh alone. The best part: it doesn’t taste anything like fish.

Makes 4 sandwiches

Grate one package of tempeh into a bowl
Add 3-4 tablespoons of Vegenaise
Add 1/4 cup of chopped onions
Add 2 small, dill pickles, chopped
Add salt, pepper, and garlic salt to taste
Mix and spread onto bread or a roll and make a sandwich!

Optional:
Serve on toasted bread
Substitute pickles and onions for cucumbers, tomatoes, and scallions
Add celery
Add vegan cheese

Put it all together and you end up with something like this:

As you can see, we went with the cucumber, tomato, scallion, vegan cheese version that day. Yesterday, we made the basic version and it was so good we didn’t even stop to take a picture. Try it and let me know what you think!
